Slow Cooker Lentil & Vegetable Soup

Ingredients

  • 1.5 cups brown lentils
  • 3 medium carrots
  • 3 stalks celery
  • 1 medium onion
  • 1 can diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon ground cumin
  • 3 cups spinach

Instructions

  1. 1.Rinse the lentils and add to the slow cooker with the chopped vegetables, tomatoes, broth, and cumin.
  2. 2.Cover and cook on low for 7 hours until the lentils are tender.
  3. 3.Stir in the spinach in the last 15 minutes until wilted.
  4. 4.Season with salt and pepper and serve.
