Slow Cooker Sweet Potato & Black Bean Chili

Ingredients

  • 2 large sweet potato
  • 2 cans black beans
  • 1 can diced tomatoes
  • 1 medium onion
  • 2 cups vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin

Instructions

  1. 1.Peel and dice the sweet potatoes and add to the slow cooker with all remaining ingredients.
  2. 2.Cover and cook on low for 6 hours until the sweet potato is tender.
  3. 3.Mash a portion lightly to thicken the chili.
  4. 4.Season to taste and portion into containers for the week.
