Ingredients

  • 8 oz soba noodles
  • 1 large cucumber, julienned
  • 1 cup edamame, shelled
  • 1 cup shredded purple cabbage
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon fresh ginger, grated
  • to top sesame seeds and scallions

Instructions

  1. 1.Cook soba noodles, rinse under cold water until cool.
  2. 2.Whisk soy sauce, rice vinegar, sesame oil, and ginger for dressing.
  3. 3.Toss noodles with cucumber, edamame, cabbage, and dressing.
