Spanish Paella

Authentic Valencia-style paella with chicken, chorizo, shrimp, and saffron-soaked rice

Ingredients

  • 2 cups Bomba or short-grain rice
  • 1 lb, bone-in chicken thighs
  • 6 oz, sliced chorizo
  • 1/2 lb large shrimp, shell-on
  • 4 cups chicken broth
  • 1/4 teaspoon, bloomed in warm broth saffron threads
  • as needed smoked paprika, tomatoes, garlic

Instructions

  1. 1.Brown chicken and chorizo in a paella pan or wide skillet; remove.
  2. 2.Sauté garlic and tomatoes; add rice and paprika, toast 1 minute.
  3. 3.Pour in saffron broth; add chicken and chorizo back; cook undisturbed 15 minutes.
  4. 4.Add shrimp on top; cook 5-7 minutes until liquid is absorbed and socarrat (crust) forms.
