Spinach & Ricotta Stuffed Shells

Ingredients

  • 12 oz jumbo pasta shells
  • 32 oz ricotta cheese
  • 10 oz frozen spinach, thawed and squeezed dry
  • 2 cups mozzarella, shredded
  • 1/2 cup Parmesan, grated
  • 1 large egg
  • 24 oz marinara sauce

Instructions

  1. 1.Cook shells al dente; mix ricotta, spinach, half the mozzarella, Parmesan, and egg.
  2. 2.Spread marinara on bottom of baking dish.
  3. 3.Fill each shell with ricotta mixture; nestle in dish, cover with remaining sauce.
  4. 4.Top with mozzarella; cover and bake at 375°F 30 minutes, uncover last 10 minutes.
