Fresh Vietnamese spring rolls with shrimp, herbs, rice noodles, and peanut dipping sauce

Ingredients

  • 12 rice paper wrappers
  • 1/2 lb, halved cooked shrimp
  • 2 oz rice vermicelli noodles, cooked
  • as needed lettuce, mint, cilantro, basil
  • 1 cucumber, julienned
  • for sauce peanut butter, hoisin, lime

Instructions

  1. 1.Soften rice paper in warm water 10-15 seconds.
  2. 2.Layer noodles, herbs, cucumber, and shrimp across center of wrapper.
  3. 3.Fold sides in and roll tightly; repeat.
  4. 4.Serve with peanut-hoisin dipping sauce.
