Sticky Toffee Pudding

British date sponge pudding drenched in warm caramel toffee sauce

Ingredients

  • 6 oz Medjool dates, pitted
  • 1.5 cups all-purpose flour
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 cup heavy cream
  • 6 tablespoons + extra for sauce butter
  • 3/4 cup / 1 cup brown sugar and cream for toffee sauce

Instructions

  1. 1.Soak dates in boiling water with baking soda; blend to a paste.
  2. 2.Beat butter and sugar; add eggs, then flour, then date mixture.
  3. 3.Bake in greased pan at 350°F for 30-35 minutes.
  4. 4.Simmer butter, brown sugar, and cream for toffee sauce; pour over warm pudding.
