Stuffed Bell Peppers

Bell peppers stuffed with seasoned ground beef, rice, tomatoes, and melted cheese

Ingredients

  • 4 large, tops cut, seeded bell peppers
  • 1 lb ground beef
  • 1 cup cooked rice
  • 14 oz can diced tomatoes
  • 1/2 onion / 2 cloves onion and garlic
  • 1 teaspoon Italian seasoning
  • 1 cup shredded mozzarella or cheddar

Instructions

  1. 1.Brown beef with onion, garlic, and Italian seasoning; drain fat.
  2. 2.Stir in cooked rice and diced tomatoes; season.
  3. 3.Fill peppers with meat mixture; place in a baking dish with 1/2 cup water.
  4. 4.Cover and bake at 350°F 35 minutes; uncover, top with cheese, bake 10 more minutes.
