Ingredients

  • 1.5 lbs pork tenderloin, cubed
  • 1 cup pineapple chunks
  • 2 bell peppers, chopped
  • 1/3 cup ketchup
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons sugar
  • 2 tablespoons cornstarch

Instructions

  1. 1.Coat pork in cornstarch; deep or pan fry until crispy; drain.
  2. 2.Make sauce: whisk ketchup, vinegar, sugar, and a splash of pineapple juice.
  3. 3.Stir-fry peppers and pineapple; add sauce and bring to a simmer.
  4. 4.Add crispy pork and toss to coat; serve with steamed rice.
