Thai Basil Chicken (Pad Krapow Gai)

Fast Thai stir-fry of minced chicken with holy basil, oyster sauce, and chilies over rice

Ingredients

  • 1 lb ground chicken
  • 4 Thai chilies or serrano peppers
  • 4 minced garlic cloves
  • 2 tablespoons oyster sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 1 cup fresh Thai basil leaves
  • 2 sunny side up fried eggs

Instructions

  1. 1.Fry garlic and chilies in very hot oil until fragrant, 30 seconds.
  2. 2.Add ground chicken, breaking it up, cook until no longer pink.
  3. 3.Add oyster sauce, fish sauce, and sugar; toss well.
  4. 4.Remove from heat, fold in Thai basil, serve over rice with a fried egg.
