Thai Shrimp Curry

Coconut milk Thai red curry with shrimp, bamboo shoots, and kaffir lime

Ingredients

  • 1.5 lbs large shrimp
  • 3 tablespoons Thai red curry paste
  • 2 cans (13.5oz) coconut milk
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 1 can / 1 pepper bamboo shoots, red bell pepper
  • 4 leaves / 1/2 cup kaffir lime leaves and Thai basil

Instructions

  1. 1.Fry curry paste in coconut cream skimmed from can until fragrant.
  2. 2.Add remaining coconut milk, fish sauce, and sugar; simmer 5 minutes.
  3. 3.Add shrimp, bamboo, and bell pepper; cook 5 minutes.
  4. 4.Stir in kaffir lime leaves and Thai basil; serve with jasmine rice.
