Ingredients

  • 4 pieces ciabatta rolls, halved
  • 12 oz sliced turkey breast
  • 1/3 cup basil pesto
  • 1 medium zucchini, sliced
  • 6 oz mozzarella, sliced
  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes, halved

Instructions

  1. 1.Preheat the oven to 400F.
  2. 2.Toss the zucchini with olive oil and roast 10 minutes.
  3. 3.Spread pesto on the cut sides of the ciabatta.
  4. 4.Layer with turkey, roasted zucchini, tomatoes, and mozzarella.
  5. 5.Bake 6 to 8 minutes until the cheese melts.
  6. 6.Serve warm.
