Vegan Chili

Ingredients

  • 1 can each black beans, kidney beans, pinto beans
  • 1 large sweet potato, diced
  • 28 oz diced tomatoes
  • 1 each diced bell pepper and onion
  • 2 tablespoons chili powder
  • 1 teaspoon each cumin and smoked paprika
  • 1 cup vegetable broth

Instructions

  1. 1.Sauté onion and bell pepper; add garlic and spices, cook 2 minutes.
  2. 2.Add sweet potato, tomatoes, beans, and broth.
  3. 3.Simmer 35-40 minutes until sweet potato is tender; season.
  4. 4.Serve with avocado, vegan sour cream, and cornbread.
