Veggie Omelette

Fluffy three-egg omelette filled with sautéed mushrooms, spinach, and goat cheese

Ingredients

  • 3 large eggs
  • 1/2 cup mushrooms, sliced
  • 1 cup baby spinach
  • 2 tablespoons goat cheese
  • 1 tablespoon butter
  • to taste salt and pepper

Instructions

  1. 1.Sauté mushrooms and spinach in half the butter until wilted; season and set aside.
  2. 2.Beat eggs with salt and pepper; heat remaining butter in a non-stick pan over medium.
  3. 3.Pour in eggs; as edges set, lift them to let raw egg flow under; cook until just set.
  4. 4.Add filling and goat cheese to one half; fold and slide onto plate.
