Vietnamese Pho

Aromatic beef pho with slow-simmered broth, rice noodles, and fresh herbs

Ingredients

  • 3 lbs beef bones (oxtail, marrow)
  • 3 / 1 stick / 4 star anise, cinnamon, cloves
  • 2-inch piece / 1 large ginger and onion
  • 3 tablespoons fish sauce
  • 16 oz rice noodles (banh pho)
  • 12 oz thinly sliced beef (sirloin or eye of round)
  • for serving bean sprouts, Thai basil, lime, hoisin, sriracha

Instructions

  1. 1.Char ginger and onion directly over flame; blanch bones, then simmer in fresh water 3 hours.
  2. 2.Toast spices and add to broth with fish sauce and sugar; strain broth.
  3. 3.Soak and cook noodles; divide into bowls with raw beef slices.
  4. 4.Ladle boiling broth over beef to cook it; serve with fresh garnishes.
